Low-carb diets have helped cast carbohydrates as something to avoid, even though carbs are an essential macronutrient that fuels the body and carb-containing foods encompass a wide range beyond bread and pasta. Over 50 years after the first publication of the Atkins diet, there’s still plenty of confusion about how carbs are a part of nutritious eating.
That’s the takeaway from new research published in the Journal of the American Nutrition Association. For the study, researchers surveyed 1,438 nutrition experts and regular consumers about 20 carbohydrate-containing foods. The study participants were asked to rate how healthy these foods were before the researchers compared the responses from experts and the general public.
After crunching the data, the researchers found “substantial consumer-expert misalignment” regarding a slew of carbohydrate-containing foods. In fact, consumers and experts had a strong difference of opinion on the healthfulness of 85% of the foods surveyed.
